Ingredients

  • 1 tbsp Coconut Aminos
  • 1 tsp Pluck seasoning of choice (plus some to sprinkle on veggies)
  • 1/2 tsp grated fresh ginger (or dried)
  • 1 tsp sesame oil
  • 4 oz Salmon Fillets (approximately 4 oz each)
  • 2 cup broccoli florets
  • 1 cup golden beets (peeled and sliced into ~1/8" half moons)
  • Drizzle of avocado oil for roasting

Directions

Step 1

Preheat oven to 400˚F and line a sheet pan with parchment paper.

Step 2

In small bowl, combine first four ingredients to make glaze.

Step 3

Arrange salmon and veggies on sheet pan.

Step 4

Spread glaze over salmon.

Step 5

Drizzle Avocado Oil and sprinkle additional Pluck over veggies. 

Step 6

Place pan in oven and roast for 20 mins.


Optional: Brown the top of the salmon by placing under broiler for 1-2 minutes before serving. Watch closely.
