Heritage Pork with Garlic & Rosemary Roasted Delicata Squash

This Heritage Pork with Garlic & Rosemary Delicata Squash is a one-pan dish that’s as nourishing as it is flavorful. The caramelized delicata squash brings natural sweetness, while garlic and rosemary infuse the pork with comforting, aromatic depth. It’s a nutrient-dense recipe rich in Vitamin A, Vitamin C, and immune-boosting compounds—perfect for family dinners or cozy gatherings.

Ingredients

  • 1 pound heritage/pasture-raised ground pork
  • ½ - 1 tablespoon Pluck Zesty Garlic seasoning
  • 2 delicata squash, halved, scooped (seeds removed), and sliced into 0.5” wedges
  • ¼ cup melted ghee
  • 6-8 cloves fresh garlic
  • ½ tablespoon dried (or fresh) rosemary
  • ¼ teaspoon fine sea salt

Directions

Step 1

Preheat the oven to 400 degrees Fahrenheit.

Step 2

Prepare the delicata. On a large cutting board, slice the squash in half, lengthwise. With a spoon, scoop out the center of the squash, including the seeds. Discard or save seeds for another use. Placing the squash flat side down, slice into 1/2 inch ‘moon’ shaped slices. Place aside. 

Step 3

Add melted ghee, delicata squash, whole garlic cloves, rosemary, and salt to a large Dutch oven and stir with a wooden spoon to coat the squash in ghee. Cover Dutch oven and bake for 15 minutes.

Step 4

While the squash cooks, prepare the meat. Add ground pork to a large mixing bowl. Add 1/2 to 1 tablespoon Pluck Zesty Garlic  seasoning and combine well. Season to your liking.

Step 5

After 15 minutes have passed, give the squash another toss and add sausage to the Dutch oven, breaking it into small, bite-sized chunks. Replace lid.

Step 6

Bake at 400 degrees F for an additional 25-30 minutes, or until meat is fully cooked through and squash has begun to soften. The garlic and rosemary should become pleasantly fragrant.

Step 7

Remove from oven gently stir ingredients one last time so the sausage and squash are well mixed. Serve in a shallow dish and enjoy!
