Ingredients
- 6 Tortillas (your choice)
- 1 can Refried beans
- 1 lb beef (or protein of choice)
- 1/2 cup Greek yogurt or sour cream
- favorite salsa
- 1 avocado
- 2 tomatoes
- 1 can black olives (or preferred olive)
- 1 green onion/scallion, minced
- 1/4 tsp ground Black Pepper
- 1 Tbsp Pluck seasoning of choice
- salt, to taste (optional)
Directions
Step 1
Preheat oven to 375 degrees fahrenheit. Chop tomatoes, green onions, and avocado
Step 2
Cut tortillas into strips or into long triangles similar to cutting a pie. Using a 12 cupcake pan, ensure each cupcake hole is layered(about 3 pieces)
Step 3
Place cupcake tray with tortillas into oven and bake for 10 minutes.
Step 4
Brown your beef in a large fry pan adding Pluck seasoning and some salt (if desired
Step 5
Once the tortillas are ready, layer in your ingredients for a delicious appetizer. I layered as follows: beans, sour cream, salsa, beef topped with sliced avocado, diced tomatoes, diced olives and scallions.
