Ingredients

  • 6 Pasture Raised Alexandre Kids Eggs
  • 1/4 cup avocado oil mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 teaspoon apple cider vinegar
  • 1/4 teaspoon sea salt
  • 1/8 teaspoon freshly cracked pepper
  • 1/2 cup crispy bacon bits, for serving
  • Fresh chives, for serving
  • Pluck Superfood Seasoning, for serving

Directions

Step 1

Heat a small saucepan on high heat until boiling. Add the eggs to the saucepan and boil for 10 minutes. Drain the water and transfer the eggs to an ice bath. Let the eggs sit for about 5-10 minutes to cool, then peel.

Step 2

Slice the eggs in half lengthwise, remove the yolks, and mash the yolks in a bowl until smooth. Add the avocado mayonnaise, mustard, apple cider vinegar, salt, and pepper to the yolks and mix until creamy.

Step 3

Spoon or pipe the filling back into the egg whites and garnish with bacon, chives, and a sprinkle of Pluck Superfood Seasoning. Refrigerate until ready to serve. Enjoy!
