Sweet Potato Chips

Sixteen plus years in the culinary field, James started as a private chef, having cooked for celebrities such as Tom Cruise, Mariska Hargitay, George Clooney, Gerard Butler, Sean “Puffy” Combs, Barbra Streisand, and John Cusack.


Step 1

Preheat oven to 350ºF Convection Bake.

Step 2

Cut sweet potatoes in half and slice into thin half moons. Toss with melted fat in a large bowl. Sprinkle Pluck to coat well.

Step 3

Place single layer on a tray. Add more Pluck (if desired), and place in oven to bake. Turn over the potatoes with a metal spatula to cook evenly. Your ultimate goal is to dry and roast the potatoes until crispy without burning them. Sweet potatoes burn easily if not checked often.

Step 4

Cook for about 15-20 minutes.

Step 5

Remove from oven and serve.


2 large sweet potatoes

2 tablespoons lard (or bacon fat, or fat of choice)

1-2 tablespoons Pluck All-purpose Seasoning
