1 Tablespoon Coconut Aminos
1 teaspoon Pluck (plus some to sprinkle on veggies)
1/2 teaspoon grated fresh ginger (or dried)
1 teaspoon sesame oil
4 Salmon Fillets (approximately 4 oz each)
2 cups broccoli florets
1 cup golden beets (peeled and sliced into ~1/8" half moons)
Drizzle of avocado oil for roasting
Preheat oven to 400˚F and line a sheet pan with parchment paper.
In small bowl, combine first four ingredients to make glaze.
Arrange salmon and veggies on sheet pan.
Spread glaze over salmon.
Drizzle Avocado Oil and sprinkle additional Pluck over veggies.
Place pan in oven and roast for 20 mins.
Optional: Brown the top of the salmon by placing under broiler for 1-2 minutes before serving. Watch closely.
