Hi Beth, You’re right. Extra virgin olive oil isn’t recommended for such high heat. One way to offset this is to combine it with a saturated fat. So sub in half olive oil and half ghee to increase the health of the fat.

Hi, I was wondering about the olive oil being used with the oven temperature being at 400 degrees. I read and have heard that heating the oil at that temperature changes it to become unhealthy.
